Street Style Tawa Samosa Chaat

Ingredients Tawa Samosa:

1. Prepare Aloo Samosa:

  • Hari mirch (Green chilli) chopped ½ tbs
  • Hara dhania (Fresh coriander) chopped ½ tbs
  • Maida (All-purpose flour) sifted 2 & ½ Cups
  • Namak (Salt) 1 & ½ tsp or to taste
  • Zeera (Cumin seeds) 1 tsp
  • Ajwain (Carom seeds) 1 tsp
  • Ghee (Clarified butter) 4 tbs
  • Water ¾ Cup or as required
  • Cooking oil for frying
  • Cooking oil 2-3 tbs
  • Ajwain (Carom seeds) ¼ tsp
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Namak (Salt) 1 & ½ tsp or to taste
  • Sabut dhania (Coriander seeds) crushed ½ tbs
  • Chaat masala ½ tsp
  • Haldi powder (Turmeric powder) ½ tsp
  • Zeera (Cumin seeds) roasted & crushed 1 tsp
  • Aloo (Potatoes) peeled & boiled 5 medium

2. Prepare Tawa Cholay:

  • Saunf powder (Fennel powder) ¼ tsp
  • Hari chutney (Green sauce) 1 tbs
  • Imli chutney (Tamarind sauce) 1 tbs
  • Safed chanye (Chickpeas) boiled along with its water) 1 & ½ Cup
  • Fried aloo samosa 2
  • Imli ka pani (Tamarind water) 3-4 tbs or as required
  • Water 2-3 tbs or as required
  • Hara dhania (Fresh coriander) chopped
  • Cooking oil 2 tbs
  • Zeera (Cumin seeds) ½ tsp
  • Pyaz (Onion) chopped 1 medium
  • Tamatar (Tomato) chopped 1 medium
  • Adrak lehsan paste (Ginger garlic paste) 1 tsp
  • Namak (Salt) ½ tsp or to taste
  • Lal mirch powder (Red chilli powder) ½ tsp or to taste
  • Garam masala powder ¼ tsp
  • Chicken powder ½ tsp
  • Zeera powder (Cumin powder) ½ tsp

3. Assembling:

  • Fried samosa
  • Dahi (Yogurt) whisked
  • Pyaz (Onion) rings
  • Lal mirch (Red chilli) crushed
  • Chaat masala
  • Nimco sev
  • Hara dhania (Fresh coriander) chopped

Directions:

1. Prepare Aloo Samosa:

  1.  In a frying visage, add cuisine oil painting, carom seeds, red chilli grease paint swab, coriander seeds, chaat masala, turmeric grease paint, and cumin seeds, mix well & cook on low honey for 30 seconds.
  2. Add potatoes, mix well & crush coarsely with the help of a lecher.
  3. Add green chilli, and fresh coriander & blend well. Samosa stuffing is ready!
  4. Let it cool.
  5. In a coliseum, add all-purpose flour, swab, cumin seeds, and carom seeds & blend well.
  6. Add clarified adulation and mix well until it crumbles.
  7. Gradationally add water & knead until dough is formed, cover & let it rest for 15 twinkles.
  8. Stretch & knead the dough again for 2- 3 twinkles.
  9. Take a small dough( 70g), make a ball and roll it out in a round shape with the help of a rolling leg also cut it into two pieces.
  10. On one side of the dough, apply water, join two sides/ edges to make a cone and press gently to seal the cone.
  11. Fill the cone with potato stuffing, apply water on the edges and bring the edges together and seal the edges duly.
  12. Prepare the remaining samosas also( makes 17- 18).
  13. In a wok, heat cuisine oil painting and shindig on veritably low honey until golden.

2. Prepare Tawa Cholay:

  1. On a griddle, add cuisine oil painting, and cumin seeds & blend well.
  2. Add onion & sauté until translucent. –
  3. Add tomatoes, mix well & cook on medium honey for 1- 2 twinkles.
  4. Add gusto garlic paste & blend well.
  5. Add swab, red chilli grease paint, garam masala grease paint, funk grease paint, cumin grease paint, and fennel grease paint & blend well.
  6. Add green sauce, and tamarind sauce & blend well.
  7. Add chickpeas along with its water, mix well & cook for 1- 2 twinkles.
  8. Add 2 fried samosas & break them with the help of a ladle.
  9. Add tamarind water & blend well.
  10. Add water, mix well & cook for a nanosecond.
  11. Add fresh coriander.

3. Assembling:

  1.  On a serving plate, break samosa, add set tawa chaat, yogurt, and onion rings, sprinkle red chilli crushed, chaat masala, nimco sev, fresh coriander, red chilli crushed & serve!
